From sour milk

To simple farm cheese. Like we used to make in Chocorua from Thistle's goat's milk when we were kids! Not quite as yummy from processed cow milk. But a great way not to waste milk that's gone bad. And to have fresh cheese when you can't get to a store. (Sadly, the only cheese the Gamboa tienda sells is individually plastic wrapped slices of bright orange American cheese. We haven't stooped that low. Yet.)
